Let’s be honest, White Whiskey, or “moonshine”, can be kinda rough (part of the appeal to some), but one of the most exciting things about young whiskey is being able to taste it before it hits the barrel, and then again after years of slow, painstaking aging. These whiskeys can be made from corn, rye, or wheat; and many of them go though very specific processes during their distillation (think Tennessee Whiskey’s charcoal filtering). Differentiated by the “Lincoln County Process” developed in the 1820’s, which filters the whiskey through 10 – 12 feet of maple charcoal before it is bottled.

RYE
Rye whiskey was extremely prevalent prior to Prohibition, especially in the Northeast. However, after Prohibition, Rye Whiskey basically disappeared! Thankfully, Rye has experienced a revival in the last number of years. The major difference between Rye and Bourbon is the majority grain, obviously Rye. Other than that, they are made almost exactly the same. Rye Whiskey will be by nature a little spicier, fruitier, and drier than Bourbon.

IRISH WHISKEY
Some people claim monks were distilling whiskey in the 6th century, others that it wasn’t until the 12th, but either way, by the 16th century distilling, and drinking, whiskey was widespread in Ireland. Irish whiskey differentiates itself in that it must be aged for at least three years in oak casks and must be distilled and aged on Irish soil.
